This is hard! Last year I learned how to make potato gnocchi and I have been quite infatuated with it. Basically riced russet potatoes (2.5 pounds), 1 egg and 2 or two cups of AP flour. Teaspoon of salt.
Bake the russet potatoes until tender. Scoop out the insides and rice (use a rice or push through a strainer). Let them cool. When cool Add the egg and mix in gently with a dough cutter. It will look rough. Start adding and working in the flour a half cup at a time. The dough will start to feel soft and pliable. Do this until you have a soft ball that is not sticky. Cut it into 4 pieces and take one out. Put the rest under a bowl. Roll it into a log about 1/2 inch thick. Cut into 1/2 inch pieces. Put onto a pan lined with parchment. Either cook immediately or freeze.
I like it because it is light and rich all at once and the toppings can be anything that makes you happy.
