Calabrese cheese and cheese pizza
INGREDIENTS
2 cups milk
1/4 cup oil
3 eggs
3 tablespoons grated Parmesan cheese
Salt to taste
2 1/2 cups whole wheat flour
1 spoon of baking powder
Filling:
1 cup tomato sauce
200g smoked calabresa sausage
300g thick grated mozzarella cheese
Oregano and olive oil to taste
METHOD OF PREPARATION
In the blender beat milk, oil, eggs, cheese, salt, wheat flour and yeast. Open the dough - which is in a soft consistency - into two pizza-shaped, greased and floured pans. In the preheated oven at 200ºC, preheat the pasta for 10 minutes. Then cover the pasta disks with the tomato sauce, the slices of sausage, the grated mozzarella, oregano and olive oil. Return to the oven until the cheese melts.
Tip: Freeze pre-baked pizza discs.

SALTED FISH PIE WITHOUT MILK
INGREDIENTS
Pasta:
2 cups and 1/2 fish broth (where the fish was cooked)
2 tablespoons cornstarch well filled
3 eggs
1 cup of oil
1 teaspoon baking powder
3 cups buckwheat
Filling:
1 large onion
3 medium garlic cloves
1 large well mature tomato
1/2 green bell pepper
350 g of fish
1 tablet of knorr
1 envelope of sazón pescado
4 cups filtered water
Salt to taste
4 tablespoons cream
Color and cumin
1 tablespoon of margarine
1 can drained green corn
2 tablespoons of wheat
METHOD OF PREPARATION
Pasta:
Dissolve the cornstarch in the fish broth
Put all the liquid ingredients first, then the rest and beat for 8 minutes in the blender, or until it has a homogeneous texture
Filling:
Season the fish with salt, paprika, seasoning, cumin and a little oil

In a pan brown the onion, garlic, tomato and bell pepper with butter, then add the fish, then the water
Let it cook until it's torn apart
Once cooked, shred the fish and mix with the sour cream and green corn
Mounting the plate:
In a greased form place part of the dough
Add 2 tablespoons of wheat to the filling so that it does not sink
Put the filling and cover with the rest of the dough

INGREDIENTS
1 kg cooked cassava
1 can of sour cream with whey
2 spoons of margarine
1/2 kg of desalted and cooked meat
1 medium onion finely chopped
4 cloves garlic, crushed
2 tomatoes, shelled and chopped
Salt and pepper to taste
METHOD OF PREPARATION
Squeeze the still warm cassava and lightly in a pan with the margarine and salt
When they are well mixed add the cream, mix and reserve
Sauté the onion and the garlic in a strand of olive oil
Add the shredded beef and let it fry a little
Add the tomatoes and cook until they are shriveled and salt if necessary
In a refractory greased with olive oil, place a layer of the manioc puree, the dried meat and finish with the remaining puree
Sprinkle with grated Parmesan cheese and bake for gratin
