METHOD OF PREPARATION

Preheat the oven to 180 ºC (medium temperature). Grease a 24 cm diameter and 7 cm high round pan with butter. Sprinkle with flour, shake and beat over the sink to remove the excess. In a bowl, place the flour, salt and yeast, passing through the sieve. Mix and set aside. Wash and peel the carrots. Discard the tip of the branch and cut the carrots into slices. In a small bowl, break one egg at a time - to check if they are good - and transfer to a blender. Add the carrots, oil and sugar and beat well until smooth, for about 5 minutes. Gradually add the blender mixture to the bowl with the dried ones, stirring gently with a wire whisk, to incorporate. Transfer the dough to the pan and bake for about 50 minutes. To find out if the cake is ready, stick a toothpick into the dough: if it comes out clean, you can take it out of the oven; otherwise, leave it for a few more minutes, until it completely bakes. Allow to cool for 15 minutes before unmolding.
